Spinach, Buffalo Ricotta and Pine Nuts Girasoli

This was a really quick dinner to prepare. The pasta only took three minutes to cook. So the only time you need is for whatever veg and sauce you’re having with it. We had ours with a garlic, onion and tin of tomatoes as a base and added in whatever veg we had handy from the fridge.

Spinach and spring onion to garnish!
